La Nouvelle Donne, Wilfried Valat, showcases the terroir of Calce

Trained in Burgundy, and based since 2007 in the hills above Calce , a small village in Roussillon that houses most of the area's finest wine-related establishments, Wilfried Valat produces some of the most exciting wines in the region.
At the Col de la Done, he cultivates 5 hectares on schist slopes, in a rugged but cool area (with north-facing exposures in particular) giving his wines an uncommon elegance.
The indigenous grape varieties, well-suited to the climate of this windy region, where nights are cold and days are hot, allow for wines that are both fresh and low in alcohol, yet retain the concentration inherent in low yields. The result is crystalline, pure wines with great depth.
