CAPREOLUS DISTILLERY, HAUTE-COUTURE GIN

Originally from the Cotswolds in southwest England , Barney Wilczak initially pursued a career as a photojournalist, which allowed him to travel the world. His love of nature soon drew him back to his native region, where he found the inspiration to create eaux-de-vie of remarkable complexity and precision. Sourcing local fruits and rare varieties, fermenting them with indigenous yeasts using the sugars naturally present in the fruit, and meticulous distillation in his two stills installed in his childhood home nestled in the heart of unspoiled nature... It's worth noting that Barney needs no less than 45 kg of fruit to produce just one liter of eau-de-vie! All these steps contribute to the creation of exclusive eaux-de-vie that are already highly sought after by connoisseurs.
