Lagar de Sabariz, the Galician paradise

If we had to name one area where the word biodynamic is a way of life rather than a marketing ploy, it would certainly be that of Pilar Higuero. One of the most knowledgeable winemakers on the subject that we have met in Spain, and even beyond.

In the heart of Galicia , she decided to plant just 4 hectares amidst unspoiled nature where viticulture had long been abandoned. No chemicals are used in the vineyard, even at the risk of the harvest. Biodynamic preparations are made from plants harvested on the property, while her flock of sheep, chickens, and geese act as natural weed control. Even the most skeptical will find some of the most interesting fine wines in the region, if not in all of Spain. Many aficionados tell Pilar that her wines are reminiscent of Sabariz... We agree.

Bottle aging is a lengthy process, and the wines are therefore released late. So, what better way to start 2026 than with wines from the 2016 vintage?
