The missing link between beer and wine

A hybrid beverage, the result of blending one-quarter lambic beer from the Den Herberg brewery and three-quarters "vin clair" (light wine) from Vin de Liège, using the traditional method, with aging on lees for varying lengths of time depending on the vintage. The result is a sparkling wine that unites the best of the Meuse (the wine) and the Senne (the lambic), hence its compound name, 'Meu-Zenne'. Grape varieties: Souvignier Gris, Johanniter / Lambics: Den Herberg. Andy de Brouwer: A renowned sommelier in Belgium and owner-manager of the bistronomic hotel-restaurant "Les Eleveurs" in Halle, Andy De Brouwer has always been seeking new experiences. But geuze is his passion. In 2014, for example, he launched "Zenne y Frontera," a lambic produced at the "3 Fonteinen" brewery. A solera of lambics in sherry casks from Bodegas Tradición in Jerez de la Frontera. In his restaurant, one of his favorite aperitifs is precisely a mixture of geuze from "3 Fonteinen" (1/4) with sparkling wine from Wilfried Schorpion (3/4) or even champagne, in the manner of the famous "half-in-half" (a mixture of champagne and white wine) once enjoyed in the Place de la Bourse in Brussels by unlucky lords of the manor at gambling.
