Superb terroir
The grapes come from the south and north faces of the Sauvagny amphitheater. The vines were planted between 1962 and 2011 and grow in the clay and limestone soils of the Jura region. The grapes are pressed as whole bunches, fermented, and aged for 12 months in large oak casks, 500-liter barrels, and concrete eggs, then transferred to stainless steel tanks for 6 months. A total of 18 months of aging.
