Korrigans, the cider by Romain Henin

After the festive season, it's time for galettes! And what better way to celebrate this special time at the beginning of the year than with cider from one of the rising stars of the new generation of Champagne producers: Romain Henin !

And what a cider! Made like Champagne, using the same method of secondary fermentation, with a second fermentation in the bottle after resting for nearly a year in barrels. A cider imbued with a certain vinous character , surprising and oh so complex! One might even be tempted to let it age in the cellar.

This is a very nice way to start this new year off gently.
